Vegan sushi—sans any fish or seafood—is still packed with flavor at the innovative Westminster eatery that opened late summer 2018. Specialty rolls like incorporate shiitake mushroom in place of eel and exchange shrimp tempura for a sweet potato variety. The casual sushi bar also features kombucha on tap, party games and vegan books, and a cozy ambiance.

The Sun Vegan

A mom-and-pop restaurant from the owners of Quan Long Hoa in Westminster, The Sun Vegan opened in early 2018. From pho and bun bo hue (noodle soup) to curry rice and spring rolls, Vietnamese comfort foods get the vegan treatment and are topped with homemade sauces and plenty of fresh veggies.
