Downtown Anaheim’s best and brightest chefs, mixologists and brew masters are dishing tips and recipes on fresh ways to spice up Labor Day!

Georgia’s Restaurant: Fried Green Tomatoes

This summer get adventurous with our family recipe for Fried Green Tomatoes! They're not complicated to prepare and if you grow them and had a bumper crop, they make a crunchy slightly tart appetizer or side dish. Yes, there are also real green tomatoes which you can find at farmer's markets or specialty stores.

Ingredients:

  • 4 green tomatoes, cut into 1/4-inch rings
  • 3/4 cup all-purpose flour
  • 1 tablespoon garlic powder
  • 4 eggs
  • 2 tablespoons of milk
  • 1-1/2 cups panko breadcrumbs
  • Pinch of cayenne pepper
  • Pinch of paprika

Dippin’ Sauce:

  • Select a medium sized bowl and mix up the following:
  • 1 cup of apple cider
  • 1 tablespoon of brown sugar
  • 3/4 cup of buttermilk
  • 3/4 cup of mayonnaise
  • 2 tablespoons of BBQ sauce
  • 1 lime, juiced
  • 4 scallions, sliced thin

Preparation: After you slice your green tomatoes, set them out on paper towels and sprinkle kosher salt and black pepper on them to pull out the excess moisture. You'll end up with crisp, delicious Southern style treats that may not make it to the table!

In a deep fryer, preheat the oil to 350 degrees F. Set out three shallow dishes: flour and garlic powder in dish one; beat eggs with the milk in dish two, and mix the bread crumbs with cayenne and paprika in dish three. Dredge the tomatoes in the flour, then the eggs and finally the breadcrumbs. Add only a few tomatoes into the fryer at a time so they cook evenly about 2 to 3 minutes. Drain excess oil on paper towels. Serve garnished with fresh chopped parsley and lemon wedges.

Chef Jimmy attributes his inspiration to his strong Latin background -- being Puerto Rican and Mexican, he familiarized himself with the flavors of both cultures at an early age. Pour Vida Latin Flavor brings hand crafted tacos and fresh pressed juices to Orange County without the fine-dining price tag. 

Ingredients, serves up to 4:

  • 1 1/4 lbs. ground beef 
  • 1/2 lb. ground Spanish chorizo 
  • 2 tbsp. kosher salt
  • 4 seasonal Hatch Chiles
  • 1 beefsteak tomato, sliced 
  • Oaxaca cheese 

Spread: 

  • 5 dill pickle spears, diced 
  • 1/2 cup Mustard
  • 1/2 cup Ketchup
  • 1 cup Mayo 

Preparation: Mix both meats together. Grill, peel, chill and chop hatch chilies and add to patty mixture. Then form the patty mixture into patties, season with kosher salt. Cook to medium, add cheese, then cook to medium well. Mix mustard, ketchup, mayo, and diced pickles to make spread. Add tomato slices to patty and serve on a pretzel or brioche bun.

 

The Blind Rabbit: Water-Proof Cocktail

Housed in the Anaheim Packing House, a contemporary food hall and former Sunkist packing plant from 1919, is The Blind Rabbit. A wall of Japanese kegs marks the entrance, pull the small statuette of a rabbit to open the door. Once inside, the tiny bar boasts a 1920s vibe with mixologists who craft fiery craft cocktails. 

Ingredients:  

  • 2 oz jalapeño infused vodka
  • 1 oz fresh watermelon juice
  • .75 fresh pineapple juice
  • .75 fresh lime juice
  • .75 vanilla cane syrup 

Preparation: To make the jalapeño vodka, cut up 2 Jalapeños sans the stems and add them to a 750-ml bottle. Let the Jalapeño sit for 15 min and taste every 15 min until you're happy with the heat. Be sure to stir the vodka or shake it before tasting for complete coverage. To make vanilla cane syrup, use 16 oz. of water and bring to a simmer. Slowly add 8 oz. of sugar and stir slowly until completely dissolved. Cut vanilla beans long way and pull back the flesh to expose the gooey center. Add a total of 7 beans into your cane and let sit until cool. After 24 hours, stir your syrup before using
